STARS® (Selective Tartrate Removal System) is the result of OENODIA’s development of an innovative, unique and high-performance eco-process: Electrodialysis (ED).

STARS STAB delivers a membrane-based technology, utilizing their exclusive Electrodialysis technique, that safely and effectively removes wine tartrates, and has been proven to enhance wine quality, save power, eliminate wine loss and reduce water usage.

Electrodialysis is the only process that can GUARANTEE 100% reliable TARTRATE STABILIZATION, whatever the color, quality or quantity of wine treated and regardless of storage conditions.  It offers a high degree of agility, enabling fast and continuous treatment while preserving the natural characteristics of the wine.

STARS®  is the only comprehensive process that combines a predictive test (DIT® test) via STABILAB to predict Tartrate stability and then delivers Tartrate stability in a single pass via STARS STABILAB is then used again to provide a specific stability verification test (ISTC50®).

An energy efficient process, electrodialysis only consumes 0.2 kilowatts per hectoliter of wine and guarantees a 100% reliable tartaric stabilization (- 4°C / 24,8°F, for 6 days) for all wines.
